Potatoes come out great when you cook them in a crock pot. Cooking them nice and slow results in some delicious dishes. Potatoes are also very inexpensive and there are hundreds of different ways you can prepare them. Have them for just about any emal of the day as a side, or enjoy an entire potato based meal like the slowcooker soup below that's as filling as it is delicious (especially on a cold day).Give one of my best crock pot potato recipes a try this week. Your family will gooble them up and keep asking for more (mine sure did).
Potato Soup From The Slowcooker
3 big potatoes, skin removed and cut into chunks
1 large onion (peeled and cut into chunks)
1 carrot (sliced)
1 stalk celery, chopped
1 small bunch of chopped parsley
5 c. water
4 chicken bouillon cubes
1 tbsp. salt
Pepper to taste
1 and a half cups of milk
Combine the veggies, seasonings and the water in your crockpot. Cook on low 10 to 12 hours or on high 3 to 4 hours. Add the milk about an hour before serving the soup. You can serve the soup chunky, or use a hand blender to turn it into a smooth and reamy dish.
Slow Cooker Hash Browns With Cheese
These aren’t your typical hash browns, but boy are they good. Perfect as a simple side for dinner or to take to a breakfast or brunch potluck.
1 (32 oz.) pkg. frozen hash browns
1 lb. Velveeta cheese
1 (16 oz.) sour cream
2 cans cream of mushroom soup
1 stick melted butter
Put all into crock stirring. Turn it on the highest setting and wait for it to start to boil, then turn it to a lower setting and let the potatoes cook for a good four hours.
I find it helps to butter the crockpot before adding everything. It makes for easier cleanup when you’re done. I use part of the stick of butter, then melt the rest and add it to the recipe.
Cream of mushroom soup can be replaced with any other cream style soup including potatoe, chicken and celery.
Scalloped Potatoes In The Slowcooker
12 med. potatoes
1/4 c. chopped onion
1 c. sour cream
1 can cream of chicken soup
1 c. shredded cheddar cheese
1/2 c. butter
1 tsp. salt
1/2 tsp. pepper
Add peeled and sliced potatoes to your crock pot. Combine everything else in a small bowl and pour it over the veggies. The potatoes should cook on low for 7 hours or high for about 4 hours. Check and make sure they are nice and tender, if not, cook them a little longer.
